Hey! I hope you are doing well.
This month in America is most known for two holidays: Veterans Day on November 11th and Thanksgiving Day on November 28th. Veterans Day always falls on the second Monday of November and Thanksgiving Day always falls on the last Thursday of November. I don't have the answers to why it's done that way, but I'll get back to you on that if I can find the answer or not.
Food is a universal substance of celebration. So, whether you're in America or another country, of if you have a holiday to celebrate or not, I have a dish I would like you to try.
Here are the ingredients and instructions. Serves 4 and takes 30 minutes. But seriously, one or two people will devour this. :)
1 Tbs. olive oil
1 sweet onion, finely chopped
4 tsp. finely chopped and peeled fresh ginger
1 tbsp. curry powder
1 pound of ground beef (80% lean)
3/4 cup dried red lentils, rinsed
1/4 cup tomato paste
1 can (13.5 ounces) coconut milk, shaken well
1/2 cup finely chopped fresh cilantro, plus whole leaves for garnish
2 tbsp. fresh lemon juice
2 tbsp. fresh yogurt for serving
1.) In a large pot, pre-heat the oil over medium heat. Add the onion and cook, stirring often until softened (2-4 minutes). Add the ginger and curry powder, and cook for one minute. Add the beef and cook, breaking up the meat with a wooden spoon until browned. About 5 minutes.
2.) Stir in the lentils and tomato paste. Stir for one minute. Then add 3 1/2 cups water, the coconut milk, and chopped cilantro. Season the soap with salt and pepper. Bring to a simmer. Cook until the lentils are tender, 20-25 minutes. Season.
3.) Take off the heat, stir in lemon juice. Divide among bowls. Top each with a dollop of yogurt and some cilantro leaves.
This meal looks so delicious!

This dish I've shared with you is one that has my mouth watering, so I wanted to share it with you. I hope you give it a try and let me know how delicious it is! :D I imagine chicken instead of beef would be great too. But don't let me screw with perfection.
